Preparation Steps
  1. Prepare the Octopus: Rinse your octopus under cold running water and ensure it’s well-cleaned.
  2. Simmer the Octopus: Combine octopus, onion, lemons, garlic, bay leaves, peppercorns, and salt in a pot with water. Simmer for 45-60 minutes until fork-tender.
  3. Make the Zesty Vinaigrette: Whisk olive oil with vinegar or lemon juice. Add parsley, oregano, salt, pepper, red pepper flakes, and lemon zest.
  4. Marinate the Octopus: Cut the octopus into grilling pieces and toss with half the vinaigrette. Refrigerate for at least 30 minutes.
  5. Prepare the Grill: Preheat your grill to medium-high heat and clean it lightly.
  6. Skewer the Octopus (Optional): Thread marinated pieces onto skewers if desired, brushing with olive oil.
  7. Grill the Octopus: Place octopus on the grill, cooking each side for 2-4 minutes until charred.
  8. Serve the Grilled Octopus: Let rest, drizzle with reserved vinaigrette and serve with lemon wedges.
