  • 1 cup Asparagus Chopped into bite-sized pieces.

  • 1 cup Chickpeas Rinsed and drained.
  • 1 cup Marinated Artichoke Hearts Rinsed before use.
  • 1 small Red Onion Finely diced.
  • 2 stalks Scallions Sliced.
  • 1 cup Fresh Basil Torn or sliced into smaller pieces.
For the Dressing
  • 3 tablespoons Lemon Juice Freshly squeezed.
  • 1 tablespoon Lemon Zest Use fresh lemons.
  • 1/4 cup Olive Oil Substitute with avocado oil if desired.
  • 1 tablespoon Dijon Mustard Adds tang.
  • 1 clove Garlic Minced.
  • 1 to taste Salt Adjust to taste.
  • 1 to taste Black Pepper Adjust to taste.

Method
 

Step-by-Step Instructions
  1. Prep Vegetables: Wash and chop vegetables as noted.
  2. Cook Pasta: Boil salted water, add pasta, cook for 8-10 minutes, add asparagus and peas last 2 minutes, drain and rinse.
  3. Make Vinaigrette: Blend dressing ingredients until smooth and emulsified.
  4. Combine Ingredients: Mix pasta and vegetables in a bowl, pour dressing over, and toss until coated.
  5. Chill: Cover and refrigerate for at least 2 hours.
  6. Serve: Toss and garnish with toppings before serving.
