For the Protein
  • 1 cup Chickpeas cooked
  • 1 cup Black Beans cooked
For the Dressing

  • 1/4 cup Poppy Seed Dressing

Method
 

Preparation Steps
  1. Wash and dry all greens, fruits, and vegetables thoroughly.
  2. Chop the lettuce or mixed greens into bite-sized pieces.
  3. Slice strawberries, apples, and mangoes.
  4. Dice cucumbers and tomatoes, thinly slice radishes.
  5. Set everything aside in separate bowls.
  6. In a large bowl, mix the greens and add fruits and vegetables.
  7. Sprinkle nuts or seeds for crunch.
  8. In a separate bowl, whisk together dressing ingredients.
  9. Drizzle dressing over salad and toss gently.
  10. Chill for 30 minutes if desired, then serve.
