Ingredients
  

For the Salad
  • 1 Corn can be fresh, frozen, or canned (drained)
  • 1 Red Bell Pepper diced
  • 0.5 Purple Onion diced
  • 1 cup Cheddar Cheese grated
  • 1 bag Chili Fritos for topping
  • 0.5 cup Mayonnaise or substitute ranch dressing, Greek yogurt, or sour cream
For Optional Add-Ins
  • 1 Grilled Chicken optional protein
  • 1 can Black Beans drained
  • 1 tbsp Lime Juice fresh
  • 1 Diced Tomatoes for added flavor
  • 1 Avocado diced

Method
 

Preparation
  1. Wash and dice one red bell pepper and half a purple onion into small pieces. Remove kernels from two ears of corn or drain canned corn.
  2. Grate about one cup of cheddar cheese.
  3. Prepare all ingredients before mixing.
Mix Salad Base
  1. In a mixing bowl, combine corn, diced bell pepper, onion, and grated cheese. Add mayonnaise and stir gently to coat.
Add Fritos
  1. Keep Fritos separate until just before serving to maintain crunch. Refrigerate mixed salad for up to a few hours.
Serve
  1. Fold in Fritos just before serving and enjoy right away.
