Preparation
- Wash and dice one red bell pepper and half a purple onion into small pieces. Remove kernels from two ears of corn or drain canned corn.
- Grate about one cup of cheddar cheese.
- Prepare all ingredients before mixing.
Mix Salad Base
- In a mixing bowl, combine corn, diced bell pepper, onion, and grated cheese. Add mayonnaise and stir gently to coat.
Add Fritos
- Keep Fritos separate until just before serving to maintain crunch. Refrigerate mixed salad for up to a few hours.
Serve
- Fold in Fritos just before serving and enjoy right away.
