Preparation Steps
- In a mixing bowl, combine 2 cups of plain Greek yogurt, ½ cup of peanut butter, ¼ cup of maple syrup, and 1 teaspoon of vanilla extract. Mix until smooth and creamy.
- Line a baking sheet with parchment paper to prevent sticking.
- Scoop out 1-tablespoon amounts of the yogurt mixture onto the prepared baking sheet, spaced about an inch apart.
- Place the baking sheet in the freezer and freeze for at least 4 hours or until solid.
- In a microwave-safe bowl, combine 1 cup of chocolate chips with 1 tablespoon of avocado oil. Heat in the microwave until melted and smooth.
- Remove the frozen bites from the freezer and dip each one in the melted chocolate, tapping off excess chocolate.
- Sprinkle a pinch of sea salt on each bite, if desired, and return to the freezer for an additional 30 minutes.
