  • 1 teaspoon Pepper
  • 2 tablespoons Fresh Herbs Chopped parsley or rosemary preferred.

  • 1 cup Vegetables Carrots, bell peppers, or asparagus.

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking dish or sheet pan with olive oil.
  2. Wash and halve the baby potatoes, then mix them in a bowl with olive oil, salt, pepper, and herbs.
  3. Spread potatoes in a single layer in the baking dish and roast for about 15 minutes.
  4. Season the chicken with salt, pepper, minced garlic, and grated Parmesan.
  5. After potatoes have roasted for 15 minutes, nestle the seasoned chicken among them.
  6. Roast everything together for an additional 25-30 minutes, checking chicken for doneness.
  7. Remove from oven, garnish with more Parmesan and parsley, then serve.
