Step-by-Step Instructions
  1. In a bowl, whisk together mayonnaise, sriracha, sweet chili sauce, honey, and lime juice until smooth. Reserve half for later.
  2. Cube chicken into 1.5-inch pieces and toss with smoked paprika, garlic powder, onion powder, salt, and pepper. Mix with half the Bang Bang sauce and refrigerate for at least 30 minutes.
  3. Thread marinated chicken onto soaked skewers, about 4-5 pieces per skewer.
  4. Preheat grill to high heat, around 400°F (200°C), and clean the grates.
  5. Grill skewers for 3-4 minutes per side until cooked through and internal temp reaches 165°F (74°C).
  6. Remove from grill, let rest for 5 minutes, and brush with reserved Bang Bang sauce before serving.
