  • 4 pieces Baking Potatoes (Russet or Yukon Gold)
  • 1 medium White Onion Can substitute with red onion
For Seasoning and Flavor
  • 4 tablespoons Butter Melted
  • 2 tablespoons Olive Oil Can use vegetable oil as alternative
  • 3 cloves Garlic Cloves Minced
  • 2 tablespoons Parsley Chopped, can be swapped with chives or thyme
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Cheesy Goodness
  • 1 cup Cheddar Cheese Shredded
  • 1/2 cup Parmesan Cheese Grated

Method
 

Cooking Instructions
  1. Preheat your grill to high heat, around 400°F (200°C).
  2. In a large mixing bowl, combine cubed baking potatoes and diced white onion. Drizzle with melted butter and olive oil, then toss in minced garlic, chopped parsley, salt, and pepper. Mix thoroughly.
  3. Lay aluminum foil on your work surface, grease lightly, place the potato mixture in the center, fold and seal edges tightly.
  4. Place the foil packets on the grill. Cook for 10 minutes, flip over, and continue for another 10 minutes.
  5. Open the foil packets carefully and sprinkle cheddar and Parmesan cheese over the mixture. Reseal and grill for an additional 5 minutes.
  6. Remove the packets from the grill, let sit for a minute, then carefully open them and serve.
