- Preheat your grill to high heat, around 400°F (200°C).
- In a large mixing bowl, combine cubed baking potatoes and diced white onion. Drizzle with melted butter and olive oil, then toss in minced garlic, chopped parsley, salt, and pepper. Mix thoroughly.
- Lay aluminum foil on your work surface, grease lightly, place the potato mixture in the center, fold and seal edges tightly.
- Place the foil packets on the grill. Cook for 10 minutes, flip over, and continue for another 10 minutes.
- Open the foil packets carefully and sprinkle cheddar and Parmesan cheese over the mixture. Reseal and grill for an additional 5 minutes.
- Remove the packets from the grill, let sit for a minute, then carefully open them and serve.
