  • 1 cup Red Bell Pepper
  • 1 cup Orange Bell Pepper
  • 1 cup Green Bell Pepper
  • 1 cup Yellow Bell Pepper Feel free to swap in zucchini or any favorite vegetable
  • 1 medium Red Onion Shallots can be used for a milder taste
  • 1 cup White Mushrooms Button or portobello mushrooms are great alternatives
For the Marinade
  • 3 cloves Garlic Or garlic powder if short on fresh
  • 1/4 cup Canola or Olive Oil Any light oil will do
  • 2 tablespoons Honey Agave syrup is an excellent vegan alternative
  • 2 tablespoons Mayonnaise Try Greek yogurt or a vegan mayo for a lighter option
  • 1 teaspoon Ground Paprika Smoked paprika gives a delightful twist
  • 1/2 teaspoon Ground Black Pepper Adjust according to taste
  • 1/2 teaspoon Salt Adjust according to taste
  • 1 tablespoon Hot Sauce Frank's or Sriracha, omit for milder flavor

Method
 

Instructions
  1. Begin by cutting the chicken breast into 1-inch to 1½-inch cubes and chop the bell peppers and red onion into similar sized pieces.
  2. In a medium bowl, mix together ground paprika, black pepper, and salt. Then, blend in mayonnaise, oil, hot sauce, minced garlic, and honey.
  3. Combine the marinated chicken and chopped vegetables in a bag or bowl, ensuring every piece is coated. Refrigerate for 30 minutes to 4 hours.
  4. Thread the chicken and vegetables alternately onto soaked skewers, ensuring not to pack them too tightly.
  5. Preheat the grill to medium heat (375°F to 400°F). Cook skewers for 12-15 minutes, turning every few minutes until chicken is cooked through.
  6. Remove from grill and let rest for a few minutes before serving.
