  • 3/4 cup Fresh Cilantro Use parsley if cilantro isn’t preferred.
  • 3/4 cup Sour Cream Greek yogurt is a healthier option.
  • 1 each Fresh Lime Juice & Zest Lemon is a good alternative.

Method
 

Step-by-Step Instructions
  1. In a glass dish or resealable bag, combine olive oil, lemon juice, and hot honey. Add lemon zest, minced garlic, and season with salt and pepper. Mix thoroughly and add chicken thighs to marinate for at least 30 minutes.
  2. Preheat your grill to high heat (around 400°F to 450°F). Lightly oil the grates to prevent sticking.
  3. Remove chicken from marinade and place on the grill. Cook for 5 minutes on one side without moving.
  4. Flip the chicken and continue grilling for another 5–6 minutes until the internal temperature reads 165°F.
  5. Remove grilled chicken and let it rest for 5-10 minutes before serving.
  6. In a large bowl, combine corn kernels, chopped green onions, and cilantro. Toss gently.
  7. In a small bowl, whisk together sour cream, lime juice, zest, and a pinch of salt and pepper. Stir into the corn salad.
  8. Serve the grilled chicken alongside the corn salad and enjoy!
