Ingredients
  

For the Chicken Marinade
  • 1 lb Chicken Breast Boneless, skinless is ideal
  • 2.5 tbsp Olive Oil Extra virgin recommended
  • 2.5 tbsp Lemon Juice Fresh juice
  • 2 cloves Garlic Minced
  • 2 tsp Oregano
  • 0.5 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 0.25 tsp Red Pepper Flakes Optional
For the Fresh Salsa
  • 1.25 cups Cucumbers Diced
  • 1 cup Tomatoes Seeded and diced
  • 1 cup Bell Pepper Diced
  • 0.25 cup Red Onion Finely chopped
  • 2 tbsp Fresh Parsley Chopped
  • 0.75 cup Feta Cheese Crumble
For Assembly
  • 8 Pitas Whole wheat or gluten-free
  • 0.5 cup Tzatziki Sauce Homemade or store-bought

Method
 

Marinade Preparation
  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes. Cut chicken into bite-sized pieces and add to marinade, coating well. Marinate for 15-45 minutes.
Salsa Preparation
  1. Combine diced cucumbers, tomatoes, bell pepper, red onion, parsley, and feta cheese in a large bowl. Drizzle with lemon juice, salt, and pepper. Let sit for about 10 minutes.
Cook Chicken
  1. Heat a skillet over medium-high heat. Cook marinated chicken in a single layer for 3-5 minutes, then flip and cook for another 3-4 minutes until cooked through, reaching an internal temperature of 165°F.
Warm Pitas
  1. Warm pitas in a dry skillet, over low flame, or wrapped in foil in a preheated oven at 350°F for about 5-10 minutes.
Assemble Tacos
  1. Fill each warm pita with cooked chicken, top with fresh salsa, and drizzle with tzatziki sauce. Enjoy!
