  • 1 tablespoon Lemon Juice Optional.
For the Topping
  • 4 ounces Goat Cheese Can substitute with feta or ricotta.
  • 10 leaves Fresh Basil Leaves Can substitute with fresh parsley or mint.
  • 2 tablespoons Honey Maple syrup can be a vegan alternative.

Method
 

Grilling Instructions
  1. Begin by preheating your grill to medium heat, around 350°F (175°C). Clean the grates with a grill brush.
  2. Slice the zucchini into even rounds or elongated halves, about a half-inch thick. Toss with olive oil, salt, pepper, and lemon juice.
  3. Arrange the zucchini slices on the grill. Grill each side for 2-3 minutes until tender with char marks.
  4. Remove the zucchini from the grill and place on a serving platter. Allow them to rest for a minute or two.
  5. Crumble goat cheese over the warm zucchini. Scatter fresh basil leaves and drizzle honey on top.
  6. Serve immediately while warm.
