- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and 2 minced garlic cloves, sautéing for 3-4 minutes until translucent.
- Add 1 pound of lean ground beef to the skillet. Cook for 5-7 minutes, breaking apart with a wooden spoon until browned.
- Stir in 2 tablespoons of tomato paste, 1 teaspoon of paprika, and 1 teaspoon of Italian seasoning. Cook for 2 minutes.
- Pour in 4 cups of broth and add 1 cup of rinsed orzo. Bring to a boil, then reduce to a simmer. Cover and cook for 10-12 minutes.
- Remove from heat and stir in ½ cup of freshly grated Parmesan cheese until melted.
