  • 2 medium Zucchini sliced into half-moon shapes
  • 2 tablespoons Olive Oil can be replaced with avocado oil
  • 1 medium Onion finely chopped; yellow or white onions work best
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano thyme can be used as an alternative
  • to taste Salt
  • to taste Black Pepper freshly ground preferred
  • 1/4 teaspoon Crushed Red Pepper Flakes omit for a milder dish
  • 1/2 cup Chicken Broth vegetable broth can be substituted
  • 1/2 cup Grated Parmesan Cheese opt for nutritional yeast if vegan

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat for 1-2 minutes.
  2. Add one finely chopped onion and sauté for 3-4 minutes until soft and translucent.
  3. Add 2 minced garlic cloves and cook for about 30 seconds, stirring constantly.
  4. Crumble in 1 pound of ground turkey and cook for 6-8 minutes until no longer pink.
  5. Slice 2 medium zucchinis and mix them into the cooked turkey.
  6. Sauté the zucchini for 4-5 minutes until slightly softened.
  7. Season with 1 teaspoon of dried oregano, salt, black pepper, and 1/4 teaspoon of crushed red pepper flakes.
  8. Pour in 1/2 cup of chicken broth and let simmer for 3-4 minutes.
  9. Sprinkle in 1/2 cup of grated Parmesan cheese and stir until melted.
  10. Taste and adjust seasonings if necessary, then serve hot.
