- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 diced onion and sauté for 3-4 minutes until soft.
- Incorporate 2 sliced carrots and 2 chopped celery stalks. Cook for another 3 minutes until they soften.
- Stir in 3 minced garlic cloves, 2 tablespoons fresh turmeric, 1 tablespoon grated ginger, 1 teaspoon cumin, and 1 teaspoon black pepper. Toast for 30 seconds.
- Nestle 1 pound of chicken into the pot. Pour in 6 cups of chicken broth and bring to a gentle boil.
- Simmer on low for 45-60 minutes until chicken is tender.
- Remove chicken, shred it, and return to the pot. Season with juice of 1 lemon.
- If desired, stir in 1 can of coconut milk or leafy greens and simmer for 2-3 minutes.
- Remove bay leaf and adjust seasonings as necessary before serving warm.
