  • 1 tablespoon Italian Seasoning

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with olive oil.
  2. Cut the zucchinis in half lengthwise and scoop out the centers, leaving about 1/4 inch of flesh.
  3. In a skillet, sauté the diced onion in olive oil until translucent, then add minced garlic.
  4. Add ground meat to the skillet and cook until browned and fully cooked.
  5. Stir in cooked rice or quinoa, tomato sauce, Italian seasoning, salt, and pepper; simmer for 5 minutes.
  6. Spoon the filling into each zucchini half and sprinkle shredded cheese on top.
  7. Cover the baking dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes.
  8. Let cool, then garnish with fresh basil or parsley before serving.
