For the Salad
  • 1 pound boneless, skinless chicken thighs can substitute with chicken breasts
  • 4 slices bacon can use turkey bacon or vegetarian bacon
  • 4 cups romaine lettuce can replace with mixed greens or spinach
  • 1 cup strawberries substitute with blueberries or raspberries
  • 1 diced avocado can be omitted for lower-fat version
  • 1 cup corn kernels use canned, frozen, or roasted corn
  • 1 tablespoon canola oil for grilling chicken

Method
 

Preparation
  1. In a medium bowl, whisk together the dressing ingredients and set aside some for later.
  2. Marinate chicken with dressing in the refrigerator for at least 2 hours.
  3. Preheat the grill and cook the marinated chicken until done.
  4. Cook bacon in a skillet until crispy.
  5. Assemble salad by layering lettuce, chicken, bacon, strawberries, avocado, and corn, then toss with dressing.
  6. Serve immediately.
