Ingredients
  

For the Cake Layers
  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder Dutch-process cocoa for milder taste

  • teaspoons baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar Splenda can be a substitute
  • ½ cup brown sugar light or dark
  • 3 large eggs Flax eggs or applesauce can substitute
  • 1 cup buttermilk Substitutes: yogurt or milk with vinegar
  • ½ cup vegetable oil Can use melted butter
  • 2 teaspoons vanilla extract Pure extract is best
  • 1 cup hot coffee Hot water can be a substitute
  • 8 ounces semi-sweet or dark chocolate Milk chocolate can be used
For the Frosting
  • 1 cup unsalted butter Margarine is a dairy-free alternative
  • 4 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 4 ounces melted chocolate
  • ½ cup heavy cream Half-and-half can be a substitute
  • mini chocolate chips or chocolate shavings For decoration

Method
 

Prepping the Cake
  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, buttermilk, vegetable oil, and vanilla until smooth.
  4. Combine the wet and dry ingredients, then add melted chocolate and hot coffee, stirring until smooth.
  5. Divide batter into the prepared pans and bake for 30-35 minutes.
  6. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. To make the frosting, beat butter until creamy, gradually add powdered sugar and cocoa, then add melted chocolate and cream.
  8. Spread frosting between the cooled cake layers, then frost the top and sides of the entire cake.
  9. Decorate with mini chocolate chips or shavings before serving.
