- Preheat your oven to 350°F (175°C) and line an 8 x 8-inch baking pan with parchment paper.
- In a bowl, combine crushed Biscoff cookies with melted butter and press into the bottom of the pan.

- Mix in melted butter and vanilla extract until well blended.
- Sift flour, cocoa, and baking powder into the mixture and fold until just combined.
- Pour brownie batter over the crust and spread evenly.
- Microwave Biscoff spread for 5-10 seconds, drop spoonfuls over batter and swirl gently.
- Bake for 22-25 minutes or until a toothpick comes out mostly clean.
- Cool in the pan for a few minutes, then transfer to a wire rack to cool completely before slicing.
