  • 1/4 cup Christmas sprinkles Can be swapped with colored sugar.
For the Cheesecake Filling
  • 16 oz cream cheese Must be softened.
  • 1 cup sour cream Greek yogurt can be used for a lighter option.
  • 1/2 cup heavy cream Contributes to rich texture.
  • 1 cup white chocolate chips Can substitute with dark chocolate.
  • 1/4 cup milk Can use non-dairy alternative.
For the Cookie Dough Balls
  • 1/2 cup additional flour Bake beforehand for safety.
  • 1/2 cup unsalted butter Should be softened.
  • 1/2 cup additional sugar Light brown sugar can be used.

Method
 

Step 1: Prepare the Crust
  1. Preheat your oven to 350°F (175°C). In a medium bowl, whisk together flour, baking soda, and salt.
  2. In a large bowl, cream together the softened butter and white sugar until light and fluffy, about 3-4 minutes.
  3. Add vanilla extract, eggs, and sprinkles. Mix until combined, then press the dough into a greased springform pan.
  4. Bake for 25-30 minutes or until golden brown on the edges.
Step 2: Make the Cookie Dough Balls
  1. Place ½ cup of flour in the oven and bake for 5 minutes.
  2. Beat together unsalted butter and additional sugar in a mixing bowl until fluffy. Stir in vanilla extract and milk.
  3. Gradually add the baked flour, mix in remaining sprinkles, shape into balls, and freeze to firm up.
Step 3: Prepare the Cheesecake Mixture
  1. Lower oven temperature to 325°F (160°C). Beat the softened cream cheese and sugar until smooth, about 2-3 minutes.
  2. Add sour cream and heavy cream, mix until fully incorporated. Gradually add eggs, one at a time, blending just until combined.
  3. Fold in about ¾ of the chilled cookie dough balls.
Step 4: Bake the Cheesecake
  1. Pour cheesecake filling over the prepared crust. Wrap the pan in aluminum foil and place in a water bath.
  2. Bake for 80-90 minutes until edges are set but center jiggles. Let cool in the oven for 30 minutes.
  3. Then transfer to the refrigerator to chill.
Step 5: Prepare Ganache & Finish
  1. Heat heavy cream in a saucepan until simmering, then pour over chocolate chips and stir until smooth.
  2. After cheesecake has chilled for at least 6 hours, pour ganache over top and decorate with remaining cookie dough balls and sprinkles.
