- Begin by taking one sheet of chilled puff pastry and gently unfold it. Cut out 20 circles, half with a smaller circle in the center.
- Stack the doughnut shapes on top of the whole circles and brush with beaten egg. Chill for 30 minutes and preheat oven to 400°F (200°C).
- Bake the pastry for 16-20 minutes until golden brown. Cool on a wire rack.
- In a mixing bowl, combine diced chicken, strained Greek yogurt, and halved grapes. Fold together gently.
- Once cooled, remove the inner circle from each pastry cup and fill with the chicken salad. Garnish with chives.
