Preparation
  1. Roll out your chilled pie crust to a 12-inch circle, fit it into a 9-inch pie plate, and refrigerate for at least 30 minutes.
  2. In a medium bowl, combine the all-purpose flour, brown sugar, ground cinnamon, and fine sea salt. Pour in melted unsalted butter and mix until resembling coarse crumbs.
  3. In a large bowl, toss sliced apples with lemon juice. In another bowl, whisk together granulated sugar, all-purpose flour, fine sea salt, and ground cinnamon. Sprinkle over apples and stir to coat.
  4. Fill the chilled pie crust with the apple mixture, leaving excess juice behind. Distribute the crumb topping over the apples, clumping slightly.
  5. Preheat oven to 400°F (200°C). Bake for 20 minutes, then reduce temperature to 375°F (190°C) and bake for another 35-40 minutes until bubbly and golden brown.
  6. Let the pie cool on a wire rack for at least 4 hours before serving.
