Step-by-Step Instructions
  1. Prepare the Cold Water Bath by filling a large sink or bowl with a few inches of cold water.
  2. Combine the granulated sugar, cocoa powder, Shetland sea salt, and full-fat milk in a medium-sized saucepan over low heat and stir until the sugar is dissolved, about 4-5 minutes.
  3. Increase heat to medium and bring to a gentle boil, stirring constantly for about 5-7 minutes, until thickened.
  4. Remove saucepan from heat and submerge in cold water bath for about 5 minutes to cool.
  5. Incorporate butter and vanilla while stirring continuously until melted and smooth.
  6. Fold in the coarsely chopped almonds and sultanas until evenly distributed.
  7. Pour fudge mixture into a lined baking dish, spreading evenly. Let cool at room temperature for about 2 hours or refrigerate for 30 minutes to set.
  8. Cut into squares and serve, storing leftovers in an airtight container.
