- In a large mixing bowl, combine crumbled bacon, cream cheese, sour cream, Monterey Jack cheese, and cheddar cheese. Mix until creamy, about 3–5 minutes.
- In another bowl, mix chopped roasted pecans, parsley, crumbled bacon, and extra cheddar cheese for the coating.
- Shape the cheese mixture into a round ball using plastic wrap to help maintain its form.
- Roll the cheese ball in the coating mixture until fully covered.
- Wrap the cheese ball in plastic wrap and refrigerate for at least one hour.
- Serve at room temperature with crackers or veggie sticks.
