Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons gochujang adjust for spice preference
  • 2 tablespoons soy sauce low-sodium recommended
  • 1 tablespoon honey or maple syrup for vegan
  • 1 tablespoon sesame oil or neutral oil
  • 2 cloves garlic (minced) fresh preferred
  • 1 tablespoon fresh ginger (grated) or powdered if needed
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon black pepper freshly cracked
For the Slaw
  • 2 cups green cabbage (finely shredded) or coleslaw mix
  • 1 cup carrots (julienned) or pre-packaged
  • 1/2 cup mayonnaise or Greek yogurt for healthier alternative
  • 2 tablespoons lime juice or lemon juice
  • 1 teaspoon sriracha optional, for extra heat
  • 1/4 cup fresh cilantro omit if not preferred
  • 2 tablespoons sesame seeds toasted for garnish

  • 4 buns burger buns (preferably brioche) soft varieties ok

Method
 

Preparation
  1. In a medium bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Whisk until smooth.
  2. Place chicken thighs in a resealable bag or bowl, pour marinade over and coat well. Seal and refrigerate for at least 1 hour, preferably overnight.
  3. In a large bowl, combine shredded cabbage and julienned carrots. In a small bowl, whisk together mayonnaise, lime juice, and sriracha. Drizzle dressing over vegetables and toss.
  4. Preheat grill or skillet over medium-high heat, lightly oil it. Grill chicken for 6-7 minutes per side until cooked through.
  5. Let grilled chicken rest for 5 minutes before slicing.
  6. Toast burger buns until golden brown on the grill or toaster.
  7. Assemble the sandwich by layering grilled chicken and slaw in the bun. Garnish with cilantro and sesame seeds.
