- Preheat your oven to 350°F (175°C) and prepare a muffin tin with cooking spray or liners.
- Whisk together the dry ingredients (flour, sugar, baking powder, baking soda, salt) in a bowl until well combined.
- In a separate bowl, mix the wet ingredients (egg, buttermilk, melted butter, vanilla extract) until smooth.
- Combine the wet and dry mixtures, stirring gently until just combined. Some lumps are okay.
- Fold in the crumbled bacon and maple syrup gently until evenly distributed.
- Fill the muffin cups about two-thirds full with batter.
- Bake in the preheated oven for 15-18 minutes until golden brown and a toothpick comes out clean.
- Let muffins cool in the tin for 2-3 minutes before transferring to a wire rack.
- Drizzle extra maple syrup over the muffins before serving.
