Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cooking spray or liners.

  3. In a separate bowl, mix the wet ingredients (egg, buttermilk, melted butter, vanilla extract) until smooth.
  4. Combine the wet and dry mixtures, stirring gently until just combined. Some lumps are okay.
  5. Fold in the crumbled bacon and maple syrup gently until evenly distributed.
  6. Fill the muffin cups about two-thirds full with batter.
  7. Bake in the preheated oven for 15-18 minutes until golden brown and a toothpick comes out clean.
  8. Let muffins cool in the tin for 2-3 minutes before transferring to a wire rack.
  9. Drizzle extra maple syrup over the muffins before serving.
