- Generously stuff each chicken pocket with the cheese mixture. Secure openings with toothpicks if needed.
- Sprinkle salt and black pepper over the exterior of each chicken breast.
- In an oven-safe skillet, heat olive oil. Sear the stuffed chicken breasts for 2-3 minutes on each side.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven, take out toothpicks, and garnish with fresh parsley before serving.
