Baking Instructions

  5. Scoop rounded amounts of batter onto prepared baking sheets, leaving at least 2 inches between each scoop.
  6. Bake for 10-12 minutes until the cakes spring back gently when touched.
  7. Cool the cakes on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  8. Prepare the cream cheese filling by beating together cream cheese, powdered sugar, and vanilla extract until smooth and fluffy, about 2-3 minutes.
  9. Spread a generous amount of cream cheese filling on the flat side of one cake, top with another cake to create a sandwich. Repeat until all cakes are filled.
