Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into ½-inch thick rounds.
  3. In a mixing bowl, toss sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  4. Arrange the seasoned rounds in a single layer on the baking sheet.
  5. Roast in the oven for 25–30 minutes, flipping halfway through.
  6. Remove from oven and cool slightly for about 5 minutes.
  7. Sprinkle with feta cheese and drizzle honey over the top.
  8. Garnish with parsley and serve warm or at room temperature.
