Preparation Steps
  1. Prepare the Marinade by whisking together soy sauce, fish sauce, lime juice, brown sugar, and chili paste in a bowl.
  2. Add chopped cilantro, minced garlic, and minced ginger to the marinade and stir to combine.
  3. Marinate the chicken thighs for at least 2 hours or overnight for enhanced flavors.
  4. Prepare the Peanut Sauce by mixing peanut butter and coconut milk until smooth.
  5. Preheat the grill to medium-high heat, approximately 400°F.
  6. Assemble the skewers by threading marinated chicken onto skewers, ensuring not to overcrowd them.
  7. Grill the skewers for 5–7 minutes on each side until cooked through and no longer pink.
  8. Brush peanut sauce on the skewers in the last few minutes of grilling to enhance flavor.
  9. Remove skewers from the grill and let them rest for about 2 minutes before serving.
