Ingredients
  

For the Kabobs
  • 1.5 pounds boneless, skinless chicken breasts can substitute with chicken thighs
  • 1 red bell pepper can substitute with zucchini
  • 1 green bell pepper can substitute with yellow squash
  • 1 red onion
  • 1 cup cherry tomatoes can swap for pineapple chunks
  • wooden skewers soak in water for 30 minutes
For the Marinade
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • to taste salt & black pepper
  • 1 teaspoon paprika

Method
 

Preparation
  1. In a medium mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and paprika.
  2. Cut chicken into 1-inch cubes and marinate in the mixture for at least 2 hours, preferably 8 hours.
  3. Prepare vegetables by cutting red bell pepper, green bell pepper, and red onion into 1-inch chunks, and add cherry tomatoes.
  4. Thread marinated chicken and prepared vegetables onto soaked wooden skewers.
  5. Preheat grill to medium-high heat, around 400-450°F, and oil the grates.
  6. Grill kabobs for 12-15 minutes, turning every 3-4 minutes, until chicken reaches 165°F.
