Ingredients
  

Marinade
  • 2 cups fresh lemon juice
  • 1 tablespoon lemon zest optional, but recommended
  • 1/4 cup olive oil can substitute with avocado oil
  • 1 teaspoon ground ginger
  • 1 teaspoon kosher salt adjust to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 pounds chicken breast thin-sliced for quicker grilling
Grilled Broccoli
  • 4 cups broccoli florets can substitute with zucchini or bell peppers
Optional Garnishes
  • 1/4 cup fresh basil or parsley
  • 2 pieces lemon slices for squeezing over before serving

Method
 

Preparation
  1. In a large ziptop bag, combine freshly squeezed lemon juice, lemon zest, olive oil, ground ginger, kosher salt, and freshly ground black pepper.
  2. Add the thinly sliced chicken breast to the marinade-filled bag, ensuring each piece is evenly coated.
  3. While the chicken marinates, preheat your grill, lightly oiling the grates.
  4. Take a grill basket and toss broccoli florets with olive oil, salt, and pepper.
Cooking
  1. Once the grill is hot, place the marinated chicken on the medium heat side.
  2. Grill the chicken for about 5 minutes on each side, checking that it reaches 165°F.
  3. Move the prepared broccoli to the high heat side of the grill and grill for approximately 5 minutes.
  4. Remove everything from the grill and garnish chicken with additional lemon zest and herbs.
