- In a mixing bowl, combine 10 ounces of softened cream cheese, ½ cup Swerve confectioners sugar substitute, 2 teaspoons of cinnamon, 1 teaspoon vanilla extract, and a pinch of sea salt. Blend until creamy and smooth.
- Take your low-carb tortillas and lay them flat. Spread 1 to 2 tablespoons of the creamy mixture evenly over each tortilla, then roll tightly.
- In a separate bowl, combine ½ cup of granulated Swerve sweetener with the remaining 2 teaspoons of cinnamon. Stir until mixed.
- Melt 6 tablespoons of butter and brush over each rolled tortilla. Roll in the cinnamon-sugar mixture.
- Preheat air fryer to 375°F and air fry roll-ups for 6 to 8 minutes, or bake at 400°F for 10 to 12 minutes.
- Let cool for a few minutes on a wire rack and serve warm, optionally garnished with crushed nuts.
