Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and equipment, including a baking sheet lined with parchment paper.
  2. Rub the chicken breast with oregano, garlic powder, salt, and pepper. Let rest for about 10 minutes.
  3. Place the seasoned chicken breast on the baking sheet. Bake for about 25 minutes until cooked through.
  4. Rinse quinoa under cold water. Combine with water in a medium saucepan, bring to a boil, reduce heat, cover, and cook for 15 minutes.
  5. Chop the vegetables: dice cucumber, halve cherry tomatoes, and dice red onion.
  6. Once cooled, slice the chicken. In a bowl, combine quinoa, vegetables, olives, and feta. Toss gently.
  7. Divide into bowls, drizzle with olive oil, and squeeze lemon juice over the top. Add fresh herbs if desired.
