- Preheat your oven to 400°F (200°C). Grease a large baking dish with olive oil.
- Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning. Drizzle olive oil over the chicken.
- Layer zucchini, bell peppers, and red onion in the baking dish. Toss with minced garlic, olive oil, salt, and pepper. Place the seasoned chicken on top.
- Bake for about 30–35 minutes until chicken reaches 165°F (75°C) and vegetables are tender.
