Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Grease a large baking dish with olive oil.
  2. Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning. Drizzle olive oil over the chicken.
  3. Layer zucchini, bell peppers, and red onion in the baking dish. Toss with minced garlic, olive oil, salt, and pepper. Place the seasoned chicken on top.
  4. Bake for about 30–35 minutes until chicken reaches 165°F (75°C) and vegetables are tender.
  5. Remove from the oven and sprinkle crumbled feta and fresh herbs on top. Return to the oven for another 5 minutes.
  6. Let the bake rest for about 5 minutes before serving warm.
