Preparation Steps
- In a medium bowl, beat 8 ounces of softened cream cheese until silky smooth for about 2 minutes.
- Gradually add 1 package of dry cheesecake pudding mix, mixing on low speed until fully combined (1-2 minutes).
- Slowly add 1 cup of French vanilla creamer, one tablespoon at a time, mixing for 3-4 minutes until smooth.
- In a large bowl, combine 2 cups of drained pineapple chunks, 1 cup of halved cherries, 2 cups of mini marshmallows, 1 cup of coconut, and 1 cup of pecans. Stir carefully.
- Fold the cheesecake mixture into the fruit mixture until well combined and coated.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
