  • 2 tablespoons Green Onions Chopped; chives or shallots can be used.
  • Sea Salt Adjust to taste.

Method
 

Step-by-Step Instructions
  1. Rinse the sushi rice under cold water until clear, then drain thoroughly.
  2. Combine rinsed rice with water in a saucepan. Boil, then simmer on low for 18-20 minutes.
  3. Remove from heat and let sit covered for 10 minutes, then fluff with a fork.
  4. Heat vegetable oil in a skillet and sauté shiitake mushrooms until golden brown, about 5-7 minutes.
  5. Add minced garlic and ginger to the skillet, followed by miso paste, soy sauce, and sesame oil. Cook for 2-3 minutes.
  6. Combine the sautéed mixture with the fluffy rice in a bowl, folding gently.
  7. Spread the rice mixture in the skillet and press down. Cook on medium heat for 10-15 minutes until crispy.
  8. Slide crispy rice onto a platter, garnish with green onions, and serve warm.
