- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, beat 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Add 1 large egg and 1 teaspoon of vanilla extract, mixing until fully combined. Gradually incorporate 2.5 cups of all-purpose flour and a pinch of salt.
- Scoop the cookie dough onto the prepared baking sheets, baking for 10-12 minutes until edges are golden.
- To prepare pastry cream, heat 2 cups of whole milk and 0.5 cups of sugar until dissolved. Whisk together 4 egg yolks and 0.25 cups of cornstarch, then slowly combine with hot milk mixture.
- Cook the mixture over medium heat until thickened, about 5-7 minutes, then stir in 1 teaspoon of vanilla extract and 2 tablespoons of butter before cooling.
- Spread or pipe about a tablespoon of pastry filling onto one cookie and top with another cookie to create a sandwich.
- For ganache, bring 0.5 cups of heavy cream to a simmer and pour over 1 cup of chocolate chips. Stir until smooth.
