- Cook bacon in a skillet over medium heat for 8-10 minutes until crispy. Remove and chop.
- Blend cream cheese and medium cheddar cheese in a mixing bowl until smooth. Add chives, minced garlic, salt, and black pepper.
- Slice each jalapeño in half lengthwise and carefully remove seeds and membranes.
- Fill each jalapeño half generously with the cheese mixture, leaving space at the top.
- Melt butter and mix with panko breadcrumbs and chopped bacon. Sprinkle over stuffed jalapeños.
- Preheat oven to 400°F (200°C). Bake jalapeños for 17-20 minutes until golden brown.
- Allow to cool for 10 minutes before serving.
