Preparation Steps
- Place the thawed chicken breasts at the bottom of your slow cooker.
- Sprinkle in the onion powder and ground black pepper, then layer the black beans, corn, and the Rotel diced tomatoes and green chilies.
- Squeeze the fresh lime juice over the mixture, then pour in the chicken broth. Place the block of cream cheese on top.
- Cover the slow cooker and set it to cook on HIGH for 3-4 hours or LOW for 5-6 hours.
- Once cooking time is up, remove the chicken and shred it into bite-sized pieces.
- Return the shredded chicken to the slow cooker and stir until combined and creamy.
