Preparation Steps
  1. Place the thawed chicken breasts at the bottom of your slow cooker.
  2. Sprinkle in the onion powder and ground black pepper, then layer the black beans, corn, and the Rotel diced tomatoes and green chilies.
  3. Squeeze the fresh lime juice over the mixture, then pour in the chicken broth. Place the block of cream cheese on top.
  4. Cover the slow cooker and set it to cook on HIGH for 3-4 hours or LOW for 5-6 hours.
  5. Once cooking time is up, remove the chicken and shred it into bite-sized pieces.
  6. Return the shredded chicken to the slow cooker and stir until combined and creamy.
