  • 4 medium Sweet Potatoes Washed and poked with a fork.
For the Filling
  • 4 cups Fresh Spinach Chopped.
  • 8 ounces Mushrooms Button or cremini, diced.
  • 2 cloves Garlic Minced.
  • 4 ounces Cream Cheese Full-fat recommended.
  • 1 cup Shredded Cheese Mozzarella or cheddar.
For Sautéing
  • 2 tablespoons Olive Oil Extra virgin.
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and poke holes in sweet potatoes.
  2. Place sweet potatoes on a baking sheet and roast for 45-60 minutes until fork-tender.
  3. Heat olive oil in a skillet, sauté garlic and mushrooms for 5-7 minutes, then add spinach until wilted.
  4. Mix sautéed mushroom and spinach with cream cheese and half of the shredded cheese. Season with salt and pepper.
  5. Once cool, slice the sweet potatoes open, scoop some flesh out, and mix it into the filling.
  6. Stuff the potatoes with the filling, top with remaining cheese, and bake for 10-15 minutes until bubbly.
