Step-by-Step Instructions
  1. Marinate the chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion for 30 minutes.
  2. Heat vegetable oil in a skillet and sear chicken until golden brown (5-7 minutes), then set aside.
  3. Blend Roma tomatoes, red bell pepper, small red onion, and scotch bonnet pepper until smooth.
  4. Cook tomato paste in the skillet for 2 minutes, then add the blended mixture and simmer for 10 minutes.
  5. Stir in garlic powder, ginger powder, bouillon cube, and salt; cook for another 2-3 minutes.
  6. Return seared chicken to the skillet, cover, and simmer on low for 25-30 minutes, basting occasionally.
  7. Garnish with parsley or cilantro and serve with rice or fried plantains.
