Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Lightly oil your baking dish or sheet pan with extra virgin olive oil.
  3. Slice the bell peppers, zucchini, and carrots, and arrange them evenly in the prepared dish.
  4. Pat the chicken thighs dry with paper towels and place them on top of the arranged vegetables.
  5. Drizzle the chicken and vegetables with more olive oil, and season generously with salt, pepper, and fresh rosemary.
  6. Bake in the oven for about 30 minutes until the chicken is golden and the internal temperature reaches 165°F (74°C).
  7. Let the dish rest for approximately 5 minutes before serving.
  8. Sprinkle the minced garlic and chopped parsley over the chicken and vegetables before serving.
