Step-by-Step Instructions
  1. In a large pot over medium heat, drizzle a tablespoon of olive oil and add finely chopped onions. Sauté for about 3-4 minutes until they become translucent and fragrant.
  2. Stir in minced garlic and cook for another minute, until the garlic is golden and aromatic.
  3. Add sliced smoked sausage to the pot, stirring well to combine with the sautéed onions and garlic. Cook for approximately 5-6 minutes until the sausage is nicely browned.
  4. Stir in uncooked penne pasta, followed by chicken broth and Cajun seasoning. Toss in diced bell peppers.
  5. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the pot. Allow the pasta to simmer for about 20 minutes.
  6. After the pasta is perfectly cooked, remove the pot from heat and stir in heavy cream until well blended, then mix in fresh Parmesan cheese.
