- In a large pot over medium heat, drizzle a tablespoon of olive oil and add finely chopped onions. Sauté for about 3-4 minutes until they become translucent and fragrant.
- Stir in minced garlic and cook for another minute, until the garlic is golden and aromatic.
- Add sliced smoked sausage to the pot, stirring well to combine with the sautéed onions and garlic. Cook for approximately 5-6 minutes until the sausage is nicely browned.
- Stir in uncooked penne pasta, followed by chicken broth and Cajun seasoning. Toss in diced bell peppers.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the pot. Allow the pasta to simmer for about 20 minutes.
- After the pasta is perfectly cooked, remove the pot from heat and stir in heavy cream until well blended, then mix in fresh Parmesan cheese.
- Spoon the pasta into bowls and garnish with extra Parmesan or chopped fresh herbs. Serve hot.
