Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 3 thinly sliced onions and sprinkle with a pinch of salt. Sauté for 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.
  2. Once the onions are beautifully caramelized, add 2 minced garlic cloves and 1 teaspoon of fresh thyme. Cook for an additional 1-2 minutes, stirring frequently, until fragrant.
  3. Pour in 4 cups of vegetable broth and bring to a rolling boil. Add 12 ounces of your favorite pasta, stirring to combine. Cook uncovered for 8-10 minutes, or until the pasta is al dente.
  4. Once the pasta is cooked, gradually mix in 1 cup of heavy cream. Continue to simmer for 3-5 minutes, allowing the sauce to thicken.
  5. Remove the pot from heat and fold in 1.5 cups of grated Gruyère cheese, stirring until fully melted.
  6. Spoon the creamy One Pot French Onion Pasta into serving bowls. Garnish with additional grated cheese or fresh herbs if desired, and serve warm.
