Method
 

Step-by-Step Instructions
  1. Season the beef chuck cubes generously with salt and pepper, and toss them in a light coating of flour for added texture.
  2. In a large skillet, heat olive oil and add the seasoned beef, browning for about 4-5 minutes.
  3. Sauté chopped onions for about 3-4 minutes until soft; stir in minced garlic and tomato paste.
  4. Pour in red wine and let it simmer for 3-4 minutes, scraping up browned bits.
  5. Combine beef broth, Worcestershire sauce, thyme, and bay leaves; pour over seared beef in the crockpot.
  6. Add chopped potatoes and carrots; cover and set the crockpot to low for 7-8 hours or high for 4-5 hours.
  7. Once cooked, remove bay leaves, taste and adjust seasoning if needed, then serve garnished with fresh parsley.
