Step-by-Step Instructions
- Begin by grating about 1 cup of fresh radishes using a box grater or food processor. After grating, place the radishes in a colander and lightly sprinkle with salt. Let them sit for 15 minutes, allowing excess moisture to drain away.
- Once the radishes have drained, take a clean kitchen towel or cheesecloth and place the grated radishes inside. Twist the cloth to squeeze out any remaining liquid, ensuring your radishes are dry.
- In a medium-sized mixing bowl, combine the grated radishes, 1 cup of Greek yogurt, 1 minced garlic clove, 2 tablespoons of olive oil, and 1 tablespoon of fresh lemon juice. Add in 2 finely chopped scallions and a handful of julienned mint leaves. Use a spatula to gently fold the ingredients together until well combined.
- Next, season the mixture with 1 ½ teaspoons of salt and ¾ teaspoon of black pepper. Stir the mixture thoroughly to ensure that the seasonings are evenly distributed throughout the dip.
- Cover the bowl with plastic wrap or a lid and place the Radish Tzatziki Dip in the refrigerator. Allow it to chill for at least 2 hours, though you can refrigerate it for up to 12 hours for even better flavor development.
- When you’re ready to serve, give the Radish Tzatziki Dip a quick stir to bring all the flavors together. Serve it chilled alongside warm pita bread, fresh vegetable sticks, or use it as a delightful sauce over grilled meats.
