Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. In a skillet, cook ground beef or turkey over medium heat until browned. Drain excess grease, add taco seasoning and a splash of water, simmer for 2-3 minutes. Cool for 10 minutes.
  3. In a large mixing bowl, combine ranch dressing, sour cream, and lime juice. Whisk until smooth, add salt and pepper to taste.
  4. Add cooled pasta, meat mixture, black beans, corn, cherry tomatoes, red onion, shredded cheese, and cilantro to the bowl. Toss well with the dressing.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Before serving, sprinkle crushed tortilla chips on top for added crunch or serve on the side.
