- Bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
- In a skillet, cook ground beef or turkey over medium heat until browned. Drain excess grease, add taco seasoning and a splash of water, simmer for 2-3 minutes. Cool for 10 minutes.
- In a large mixing bowl, combine ranch dressing, sour cream, and lime juice. Whisk until smooth, add salt and pepper to taste.
- Add cooled pasta, meat mixture, black beans, corn, cherry tomatoes, red onion, shredded cheese, and cilantro to the bowl. Toss well with the dressing.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Before serving, sprinkle crushed tortilla chips on top for added crunch or serve on the side.
