  • 1 teaspoon Mustard Dijon works perfectly
  • 1 clove Garlic minced
  • 1 tablespoon Honey maple syrup as vegan alternative
  • to taste Salt
  • 1 small Shallot finely chopped
Salad Ingredients
  • 2 cups Strawberry fresh, sliced
  • 2 cups Spinach
  • 4 cups Romaine Lettuce torn into bite-sized pieces
  • 1 cup Feta Cheese crumbled
  • 1/2 cup Almonds toasted
  • 1/4 cup Red Onion thinly sliced

Method
 

Preparation Instructions
  1. Toast the almonds in a skillet over medium heat for about 4 minutes until golden brown and fragrant.
  2. Prepare the dressing by blending olive oil, cider vinegar, mustard, minced garlic, chopped shallot, diced strawberry, honey, and salt until emulsified.
  3. Wash and dry the romaine lettuce and spinach, tearing the romaine and keeping the spinach leaves whole.
  4. Assemble the salad by placing greens in a bowl, topping with feta, red onion, sliced strawberries, and toasted almonds.
