Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry about two cups of cherry tomatoes.
  3. Slice off the top of a whole head of garlic to expose the cloves.
  4. Drizzle cherry tomatoes with olive oil and season with salt, pepper, and red pepper flakes.
  5. Line a baking sheet with parchment paper and spread the seasoned tomatoes and garlic.
  6. Roast in the oven for 25-30 minutes until blistered.
  7. Boil salted water and cook pasta until al dente, about 8-10 minutes.
  8. Mash the roasted garlic in a bowl after it cools.
  9. Combine mashed garlic with roasted tomatoes and juices in a mixing bowl.
  10. Stir in remaining olive oil and balsamic vinegar, adjusting seasoning if needed.
  11. Add drained pasta to the sauce, mixing thoroughly.
  12. Fold in chopped basil and serve hot topped with grated Parmesan cheese.
